In the Ristoranti d’Italia 2027 guide, the contemporary cuisine of chef Matteo Armanino again earns two Forchette, with 81 points out of 100. One more than last year.
Two Forchette, for the second year. In Gambero Rosso’s Ristoranti d’Italia 2027 guide, Aria | Ristorante confirms the award with a score of 81 out of 100: one point more than in the 2026 edition.
From this year the guide gives a single score that looks at cuisine, wine list and service together. A result shared by the whole team, in the kitchen and in the dining room.

The sea on the plate
The guide describes the terraces of Villa Riviera Resort overlooking Sestri Levante and chef Matteo Armanino’s research between Ligurian produce and technique. The sea takes centre stage in the tasting menus. Among the dishes mentioned: grilled cuttlefish, risotto with mantis shrimp, and spaghetti in hay broth with raw scampi and samphire, the signature dish of the menu. From the hinterland, Langhe lamb in three servings.
An award that sits alongside the MICHELIN Guide recognition.
