In Gambero Rosso\u2019s Ristoranti d\u2019Italia 2027 guide, Aria | Ristorante confirms the award with a score of 81 out of 100: one point more than in the 2026 edition.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">From this year the guide gives a single score that looks at cuisine, wine list and service together. The sea takes centre stage in the tasting menus. Among the dishes mentioned: grilled cuttlefish, risotto with mantis shrimp, and spaghetti in hay broth with raw scampi and samphire, the signature dish of the menu.
